Simple Tomato Sauce

  • extra virgin olive oil
  • 2-4 peeled garlic cloves minced
  • 2 28 oz cans peeled tomatoes in juice
  • 4 leaves fresh basil torn OR
  • 1 sprig fresh rosemary
  • Salt to taste

  • 2-4 peeled garlic cloves minced
  • 2 28 oz cans peeled tomatoes in juice

Instructions
  1. Film the surface of a large skillet with olive oil. Add garlic and cook over medium heat until the garlic gives off its characteristic aroma.
  2. Break the tomatoes up with your fingers or use an immersion blender but don't blend too much. You want a rustic, not a smooth sauce.
  3. Add the tomatoes to the garlic and cook over moderately high heat until the tomatoes begin to break down and form a sauce. For more flavor and better texture drizzle another 2-4 tablespoons olive oil over the tomatoes as they cook.
  4. Stir frequently. Add the basil or rosemary and season with salt to taste. Continue cooking over moderately high heat until the sauce thickens.
  5. Remove rosemary sprig, if using.
