Instructions
- Film the surface of a large skillet with olive oil. Add garlic and cook over medium heat until the garlic gives off its characteristic aroma.
- Break the tomatoes up with your fingers or use an immersion blender but don't blend too much. You want a rustic, not a smooth sauce.
- Add the tomatoes to the garlic and cook over moderately high heat until the tomatoes begin to break down and form a sauce. For more flavor and better texture drizzle another 2-4 tablespoons olive oil over the tomatoes as they cook.
- Stir frequently. Add the basil or rosemary and season with salt to taste. Continue cooking over moderately high heat until the sauce thickens.
- Remove rosemary sprig, if using.
