I wish I had been able to tell you that you should freeze it uncooked. Then simply bake from the freezer on Wednesday. Either freezing or refrigerating the galette will degrade the texture of the crust somewhat. Wrap it really well, first in paper towels (to absorb moisture) then in plastic wrap or foil and freeze it. Let me know how it tastes.]]></description>

					<description><![CDATA[I&#039;d never made a pie from scratch before today, and my cooking skills are, well, undeveloped. Last night I was watching the Chef Show with my wife and you were making this Peach Galette. It looked so good. And your explanations made it all look doable, and ... fun. 

I woke up this morning and said to my wife, &quot;I&#039;m going to make that pie.&quot; 

I crumbled butter and dough, folded it, cooled it, rolled it. Boiled and peeled 7 nectarines. The only thing I didn&#039;t do from the recipe is use a rolling pin, because we don&#039;t have one. So, I used a large empty metal water bottle. 

It turned out damned delicious and I am a hero right now in my house.

I gave him a 1/8 serving. 45 minutes later I went to serve the pie to everyone else and there was another piece missing! My son had come back for seconds before anyone had even had firsts...this was unusual so I asked him if he had done that...he looked sheepish and said...I couldn&#039;t help it!!! Once I tasted it I understood...amazing! Especially for my first attempt, second attempt will likely be heavenly! Thank you for sharing Evan!]]></description>
